Cheddar has a rich, creamy flavor that becomes increasingly sharp and complex with a smooth, firm texture that becomes more granular and crumbly as it ages. For golden Cheddar, milk is colored with a tasteless, odorless natural vegetable dye made from Annatto seeds. Sharp Cheddar is aged at least one year before packing.

HERITAGE: Cheddar was first developed by cheese makers in the Cheddar Gorge in England. Later, colonists produced Cheddar in the New World. Cheddar still ranks as the most popular cheese in the world.

IN THE KITCHEN: Cheddar can be used in soups, sauces, salads, sandwiches, and casseroles or paired with apples, pears, onions, tomatoes, red wine, and beer. Mild and medium Cheddars have a creamy texture that performs better as an ingredient rather than a surface melt.
